This paper reviews some important antioxidant enzymes i.e. catalase, glutathione peroxidase, superoxide dismutase, as well as nonenzymatic antioxidants such as total polyphenol and vitamin C,
and their function in protecting skin against oxidative stress. Since Malaysia is a tropical country rich in a variety of plants, this paper also discusses new findings on antioxidant contents of traditional salads, in particular the antioxidant enzymes, vitamin C and total polyphenol.
